Alternative Apple Pie

My alternative apply pie (this is the mini version)

It’s known to everyone that my mom can make a pretty mean apple pie. I altered her recipe completely for someone with severe allergies. When I made this recipe, I never realized how many people I’d be helping out with it. I’ve been sharing it with people who follow all kinds of diets. So, it’s high time for me to share my Alternative Apple Pie recipe with everyone on my website.

This recipe is for everybody who can’t eat eggs, flour (gluten) and dairy products (incl. butter).

Ingredients:
For the filling:
2 or 3 big apples,
50 grams raisins,
a little bit of honey (or maple syrup),
1 teaspoon cinnamon,
a little bit of lemon juice

if you’re not allergic to nuts, you can add hazelnuts to the filling too.

For the pie:
300 grams oatmeal, grind it to look like flour,
3 spoons sunflower oil,
3 table spoons honey (or maple syrup),
3 table spoons of apple sauce,
a little bit of salt,
half of a lemon peel, grated

What you need:

Foodprocessor
Springform cake tin (with a diameter of 20 cm)
A bowl for the filling

Step 1) Preparation

Peel the apples and cut them into pieces. Put the pieces in a bowl and sprinkle them with a little bit of lemon juice. Add the raisins, honey (or syrup) and cinnamon. Put the bowl aside, while working on the dough.

Make sure you grease the cake tin. If you want to, you can also add a layer of baking paper.

Step 2) Make The Dough

If you haven’t done so yet, grind the oatmeal to a flour in the food processor. Add the rest of the ingredients and let the machine knead it all together until it forms a ball. If it doesn’t happen automatically, knead it manually until it’s a ball. Remove a little bit of dough (like a little over a quarter of it) and store it for later use. Make sure the rest of the dough is still a ball shape.

Step 3) Put This Apple Pie Together

Preheat the oven at 175 degrees Celsius, while doing this step.

Take the big ball of dough and flatten it in the greased tin. Push the dough up onto the sides of the cake tin. I try to make sure it reaches the edge, but you can make it slightly higher too, if you want to.

Add the apple mixture on top (and add the hazelnuts if you are using them).

Take the small bit of dough that you’ve put aside. Divide in a few smaller pieces and roll them, by hand, to create an even amount of strips. Cover the pie with the strips. Create a cross pattern with it.

Step 4) Bake It, Taste It!

Put the pie in the middle of the preheated oven and bake it for at least an hour until it’s brown and cooked.

No need to wait until the pie cools off. It’s so good to eat when it’s warm! Bon apetit!


Appeltaart

Mijn appeltaartje (de mini versie)

Alternatieve Appeltaart

Het is algemeen bekend dat mijn moeder een geweldige appeltaart kan bakken. Ik heb haar recept aangepast voor iemand die met veel allergieën te maken heeft. Toen ik deze aangepaste versie maakte, kon ik niet voorspellen hoeveel mensen ik hiermee kon helpen. Ik blijf dit recept steeds naar mensen toesturen, die met allerlei dieten bezig zijn. Dus, het is hoog tijd dat ik het recept gewoon hier op mijn website deel.

Dit recept is dus voor iedereen die geen eieren, bloem of melkproducten (zoals boter) mag hebben.

Ingrediënten:

Voor het vulsel:
2 a 3 grote zure appels (liefst goudreinet),
50 g rozijnen,
een klein beetje honing (of ahornsiroop),
1 theel. kaneel,
een klein beetje citroensap

Voor het deeg:
300 g havermout, gemalen (of havermeel),
3 el zonnebloemolie,
3 el honing,
3 el appelmoes,
snufje zout,
geraspte schil van een kwart citroen

Benodigdheden:

Keukenmachine,
Springvorm (met een diameter 20 cm),
Een schaal voor het vulsel

Stap 1) Voorbereiding

Schil de appels, verwijder het klokhuis en snijd deze in stukjes. Doe de stukjes in een aparte schaal en giet er een beetje citroensap over. Voeg vervolgens de rozijnen, honing (of siroop) en kaneel toe. Zet de schaal aan de kant, terwijl je het deeg maakt.

Vet de springvorm in. Als je wilt, kun je ook nog een laag bakpapier erop doen.

Stap 2) Maak het deeg

Doe de havermout in een keukenmachine en maak dit fijn, zodat het eruit ziet als meel. Voeg olie, appelmoes,  honing, zout en citroenschaafsel erbij. Laat de machine lopen totdat het deeg goed samenkomt. Als het niet vanzelf een bol vormt, kneed het dan tot een bal. Haal een kleine kwart van het deeg eraf om later de reepjes voor de bovenkant van te maken.

Stap 3) De appeltaart maken

Terwijl je met deze stap bezig bent, kun je de oven alvast voorverwarmen op 175° Celsius.

Neem de grote bal deeg en plet deze in de ingevette springvorm. Duw het deeg naar de zijkanten en op de zijwanden. Ik stop zelf bij de rand, maar je mag er ook overheen gaan, zodat je kortere reepjes nodig hebt.

Voeg het appelmengsel toe (en voeg hier ook hazelnoten toe als je deze gebruikt).

Verdeel het kleine beetje deeg dat je over hebt, in kleine stukjes. Rol deze met de hand uit naar gelijke repen. Bedek kruislings de taart ermee.

Stap 4) Bakken en proeven!

Zet de taart in het midden van de voorverwamde oven en bak het voor minimaal een uur totdat het bruin en gaar is.

Eenmaal klaar hoef je niet te wachten totdat de taart gekoeld is. De taart is ook ontzettend lekker warm. Bon apetit!
