My Mr. Snowman Cake

Help the snowman is sinking!

To finish some of the fondant I once got for cup cakes, I baked this cake for our Christmas party. It just seemed like fun. Just a week earlier, I had tried this cake recipe and wanted to adjust it to my liking. I also never decorated a cake, so I really wanted to give it a try. It threw me off a bit to discover the fondant didn’t have the usual Christmas colors (reds and greens). So, with the black, white, brown and mint blue, I pretty quickly came up with a theme of ice and snow, this a snowman!

Due to the amount of sugar added by the fondant and the filling, I reduced the sugar in the recipe for the sponge cake, but obviously, this cake is not good for any diet or healthy living.

It takes some time to complete the cake including the decoration. It took me all of Christmas Eve. So to give you the best advice first. Bake the cake a day before you do the filling and decorating.

Ingredients:
For the cake
100 grams butter, melted,
6 eggs,
150 grams sugar,
190 grams flour

Filling
Strawberry jam,

For the whipped cream filling
1 cup of cream (200 ml),
half a bag of vanilla sugar (or more if you like it sweeter),

For the butter cream filling
100 grams unsalted butter, soft,
powdered sugar (use to your desired level of sweetness)

For the decorations
Fondant in various colors

What you need:
Three bowls
Mixer
Springform cake tin (with a diameter of 24 cm), buttered
2 or  3 cocktail sticks
Piping bag

Preheat the oven at 170°C.

Step 1) The Cake Batter

Separate the egg yokes from the egg whites in two separate bowls. Add half of the sugar to the egg whites and whip it until you can create soft white spikes that stay upright.

You need to work quickly for the following step:

Hang the bowl with the egg yokes over a bowl with hot water. Make sure it hovers and can’t sink in the water. Then quickly add the other half of the sugar to the egg yokes – in the top bowl – and whisk to a foamy substance.

Fold the two egg mixtures together in the bowl with the egg whites and gently add the flour and, finally, the butter. Do not beat the batter. Just fold and gently stir. Treat with as much care to keep the fluff and air as much as possible.

Put the batter in the cake tin and bake the cake in the oven for 35 minutes on 170°C. It should be golden brown. Check if it’s cooked though! It should be!

Let the cake cool down completely before proceeding.

Step 2) The Butter Cream

This is so simple. It’s my super lazy version of it. Just mix the butter with the sugar together. Add as much powdered sugar until you feel it tastes right.

You don’t really need that much of the butter cream anyway. It’s used for a border to keep the whipped cream filling in its place. It also makes sure the whipped cream doesn’t touch the fondant. Additionally, you need some butter cream as an adhesive to hold the fondant in its place.

Step 3) Prepare The Whipped Cream

Add the vanilla sugar to the cream and whip it until it’s set.

Step 4) Assemble The Cake

When the cake is completely cooled down, cut it horizontally to create two equal cake layers. Once cut, wait before removing the top layer! You have to mark the spot first. This will help you put the cake back together, correctly, later. Stick one cocktail stick in each layer cake at exactly the same spot. So, when you put the two layers back on top of each other, you know to align the sticks and the cake will fit perfectly in place.

Once that’s done, remove the top layer. Store it for later.

Add a layer of strawberry jam on the bottom cake layer. Then, use a piping bag to create a border with the butter cream right on the edge of the cake. You basically create a little outline. Next, fill the inside with whipped cream and put the cake layers back together.

Cover the whole cake with the remainder butter cream.

Step 5) Decorate!

Finally, the fun part! For my decorations, I looked for various round shaped objects in my kitchen cabinets. As you can see, most of the cake is covered with black fondant, then there’s a border of brown, then a border of minty blue and then a round white circle. To make sure they all fitted correctly, I used bowls and whatever else, as templates. So go ahead and start cutting that fondant into circles!

The original idea for my decoration was to make it look like the snowman was melting into the ice. The blue would be water, brown would be mud, but I found out no one got this idea when I served the cake. LOL! I should’ve messed up my snowman for this too, but didn’t want to do it.

It couldn’t be easier to create the snowman. Twist some white fondant in the palm of your hand into a ball for the body. Then, do the same to create a smaller one for the head. Create a square from the black fondant. Bend it a little on two side and add a flat circle to it. Congrats, you just made the hat! Get creative on the face and other decorations. It will save you so much stress (that I did have) if you happen to have great cookie cutter shapes!

I added some powdered sugar to make it look like it snowed a little and served it. Enjoy making and eating it!

Om wat fondant op te maken, die ingeslagen waren voor cupcakes, heb ik deze taart gemaakt voor ons kerstfeest. Ik had net een week eerder voor het eerst met dit cakerecept gewerkt en wou het aanpassen naar mijn eigen smaak. Daarnaast kon ik de verleiding niet weerstaan om te zien of ik het kon decoreren. Dat had ik nog nooit gedaan. Ik schrok echter wel om te ontdekken dat de fondant totaal geen kerstkleuren hadden. Dus door het zwart, bruin, blauw, wit neigde ik als snel naar ijs en sneeuw, dus een sneeuwman!

Met alles al zo zoet, het fondant, de vulling, heb ik al snel het suiker verminderd in alles van de cake tot de botercrème. Mijn filosofie met bakken is dat er bij gebruik aan zoet in de koek of cake, je dat nog aardig kunt herstellen aan de buitenkant. Toch is dit natuurlijk niet de cake voor een gezonde levensstijl.

Neem je tijd ervoor. Ik was heel kerstavond bezig om deze taart te maken. Het handigst is om de cake een dag eerder te maken en de volgende dag het af te maken.

Ingredienten:
Voor de cake
100 g boter, gesmolten
6 eieren
150 g suiker
190 g bloem

Vulling
Aardbeienjam,

Voor de slagroom vulling
1 beker slagroom (200 ml),
half zakje vanillesuiker

Voor de botercrème vuling
100 gram ongezouten roomboter, zacht,
poedersuiker (gebruiken naar smaak)

Voor de decoraties
Fondant in diverse kleuren

Benodigdheden:
Drie schalen
Mixer
Springvorm (met een diameter van 24 cm), ingevet,
Spuitzak
2 cocktailprikkers

Verwarm de oven voor op 170°C.

Stap 1) Het beslag maken voor de cake

Scheid het eiwit van het eigeel in twee verschillende schalen. Voeg de helft van de suiker toe aan het eiwit en klop dit stijf, totdat je zachte pieken krijgt die overeind blijven staan.

Voor de volgende stap moet je ontzettend snel te werk gaan:

Hang de schaal met het eigeel over een schaal met heet water (au bain marie). Zorg ervoor dat de schaal met eigeel er niet in kan vallen. Voeg snel het tweede deel suiker toe aan het eigeel en klop tot een luchtig schuim.

Vouw de twee eimengsels samen en voeg voorzichtig het bloem, en als laatste de boter, toe. Ga het niet mixen, want dan sla je het lucht eruit. Voorzichtig vouwen en roeren, zodat de lucht er dus in blijft.

Doe het beslag in de springvorm en bak het voor 35 minuten op 170°C. Het zou goudbruin moeten zijn. Check of het gaar is.

Laat de cake helemaal afkoelen voordat je verder gaat.

Stap 2) Botercrème maken

Dit is echt de supersimpele, luie versie. Mix het boter en het suiker samen. Voeg zoveel poedersuiker toe als jij lekker vindt.

Je hebt niet veel van het crème nodig. Het wordt alleen gebruikt voor een dijkje in de taart. Dit is een randje om te zorgen dat de vulling op zijn plek blijft, maar vooral om te zorgen dat de slagroom vulling het fondant niet raakt. Aan de buitenkant wordt het ook nog gebruikt om te zorgen dat het fondant blijft plakken.

Stap 3) Slagroom voorbereiden

Voeg het vanillesuiker toe aan het room en klop het tot het stijf is.

Stap 4) De taart samenstellen

Wanneer de cake helemaal gekoeld is, snijd de cake dan horizontaal door midden. Wacht met het verwijderen van de bovenste laag! Je moet de lagen nog markeren. Dit gaat je helpen wanneer je de lagen weer samen gaat voegen. Steek in eerdere laag cake, op hetzelfde stukje, een cocktail prikker. Wanneer je straks de taart weer samenstelt, dan weet je dat de twee prikkers boven elkaar moet hebben. Dan zitten de lagen precies weer goed op elkaar.

Zodra je dat dus gedaan hebt, kun je de bovenste laag even opzij leggen.

Smeer een laag aardbeienjam op de onderste cake. Gebruik vervolgens een spuitzak om een rondje botercrème te spuiten aan de buitenste rand van de cake. Dit heet een dijkje. Vervolgens vul je dit rondje met het slagroom. Als laatste leg je de bovenste cake er weer, op de juiste manier, op.

Besmeer de hele cake met het restant botercrème.

Stap 5) Decoreren!

Het leukste gedeelte! Voor mijn decoraties heb ik mijn keukenkastjes afgezocht naar rond schaaltjes en schoteltjes, die ik als sjablonen kon gebruiken. Zoals je kun zien, bestaat mijn taart uit een zwarte buitenrand, een randje bruin, een randje blauw en een circel wit. Dus ga maar zoeken en snijden!

Het originele idee van mijn decoratie was dat de sneeuwman moest lijken te smelten in het ijs. Vervolgens het ijs in het water (dat blauwe) en dan heb je een randje modder (bruin). Dan is zwart maar aarde, dacht ik. Echter heb ik bij het serveren gemerkt dat dit idee niet over was gekoken. Haha! Ik denk ook dat ik dan mijn sneeuwman had moeten verpesten, zodat het leek alsof hij aan het smelten was en ik was er juist zo blij mee dat ie wel leek!

De sneeuwman

De sneeuwman is zo makkelijk te maken. Draai wat fondant in je handpalm tot een bal voor het lichaam en herhaal dit met wat minder fondant voor zijn kop. Van het zwarte fondant heb ik een vierkante gemaakt en die wat deuken gegeven aan twee kanten. Daaronder heb ik een circel geplakt. En daar was de hoed!  Wees creatief met de rest. Het zal je weel stress schelen (wat ik wel heb gehad) als je al wat leuke koekjes vormpjes hebt!

Met wat poedersuiker zorgde ik voor wat extra sneeuw. Veel plezier met het maken en eten hiervan!
